Asparagus

Asparagus awakens from its long slumber when spring arrives, using the water from melting snow in the fields and the sugar stored in its roots to grow sweet and juicy.
The nutrients the asparagus produces over the summer and fall are stored as sugar in its roots as it sleeps peacefully under the snow until spring.
Spring asparagus is packed with rich umami flavours. Summer and fall asparagus, on the other hand, has a light, fresh taste as the young shoots pop up quick and tall under the abundant sunshine. It is another unique Fukushima flavour brought to you by the blessings of nature.

Asparagus is Packed with Amino Acids

It has been discovered that Asparagus contains high levels of glutamic acid (an umami component) in the centre of the stem and tip, and GABA (which has anti-stress properties) in the stem skin and tip.

Full of Love and Benefits

Once asparagus is planted, the same clumps can be maintained for as long as eight to ten years, making soil management incredibly important. Producers infuse the soil with plenty of high-quality compost and carefully manage cultivation with tender-loving care.
Asparagus is packed with aspartic acid, its namesake amino. In addition to being an umami component, aspartic acid makes the body more resilient to fatigue and allows it to recover faster. Why not boost your health with some delicious Fukushima asparagus?

Purple Asparagus?! Developed in Fukushima!

Only a handful of prefectures are developing asparagus cultivars, and Fukushima is one of them.
An original purple cultivar has also been developed, creating asparagus with wide range of colours growing across the prefecture.

Fukukitaru

The spring buds emerge early, and many of them are thick and hearty, allowing you to enjoy the seasonal flavours ahead of time.

Harukitaru

It is a green asparagus with a tender texture and a beautiful shape.

Harumurasaki F

This purple cultivar is much sweeter than green asparagus, and has a tender texture. It’s also packed with the polyphenols rutin and anthocyanin.

Green, White, and Purple Asparagus!

While green and purple asparagus grow under the abundant blessings of the sun, white asparagus is cultivated to prevent sunlight from reaching the growing shoots. The white colour results from differences in cultivation methods rather than the variety itself. All three colours are sold in the Aizu region, so make sure to try them all!
