Premium offerings born of Fukushima Pride
Fukushima Prefecture covers a vast area that is made up of three regions, each with their its own distinctive features. The produce and livestock that come out of our different natural environments offer a wealth of delicious variety to discover. Among them are eleven specialty products with some of the highest yields in Japan--the foods that serve as “the signature of Fukushima”. So dive in and discover the amazing flavors that come from our farms, forests, and fisheries--cultivated with pride of local Fukushima producers.


Cucumbers
What makes it so special?
Cucumbers are the signature vegetable of Fukushima, and are grown all over the prefecture. And Fukushima takes pride in producing more summer-fall cucumbers than anywhere else in Japan--thanks to the fact that our rainfall and summer/fall temperatures are perfect for them. Crisp and juicy, they’re a popular essential for any summer table.
Selecting the perfect
Select cucumbers that are a shiny deep green color. The ones that have a surface texture that is sharp enough to be almost painful to the touch are the freshest. They should be firm from end to end and have a noticeable weight to them as well. A little curve is fine, but make sure to look for uniform thickness throughout.
Storage and preparation
Dusting cucumbers with a little salt and rolling them on a cutting board will help remove the nubs, brighten the color, and mellow their flavor. Cucumbers are susceptible to moisture, so make sure to wipe them well, place them in a storage bag, and keep them in the refrigerator. They’ll last longer if you store them upright with the stem pointing up.
