You can make apple tea with any kind of apple, but richly-colored Jonathan apples or Beni-Kohaku (an original Fukushima variety) add a lovely hue to the black tea. You can also use just the apple peels, but the flavor and aroma is stronger if you use the whole fruit. The key to great apple tea is waiting for it to steep a bit and then sipping it slowly. The apple flavor increasingly penetrates the tea as time goes by--which is one of the great joys that only comes from making it with real apples.
