A favorite of peach grower Yuki Sato!

Peach compote with mint

Ingredients(serves 4)

2–3 Akatsuki peaches 
A few mint leaves 
Half a lemon 
Mineral water (suitable amount) 
■ Flavorings
 Sugar to taste 

Directions

    Pour a small amount of mineral water into a pot, adding sugar and fresh-squeezed lemon juice to taste. Bring to a boil.

    Remove from heat and add 3–4 mint leaves. Cover and let steam for a minute or so to make the syrup.

    Place peach slices into a glass jar or similar container.

    Remove the mint leaves from the cooled syrup and add it to the container. Stir gently.

Akatsuki peaches are the pride of Fukushima Prefecture and one of its signature peach varieties, thanks to their fragrant aroma and smooth pulp that feels like silk on the tongue. Making them into compote brings out their delicious flavor even more. Adding a mint accent gives this compote a refreshing taste that’s perfect for the summer months.

The Prefecture may subcontract operation of the Website to another operator, but will ensure that such an operator takes necessary measures for managing the collected information in an appropriate manner.
