Fresh-steamed rice

  • Rice (as needed)
  • Water (as needed)

    Transfer the desired amount of rice to a bowl and add plenty of water.

    Make a claw shape with your hand and run in through the rice to wash it, then drain the water. Repeat two or three times.
    Note: Be careful not to scrub the rice too hard

    Soak the rice to gelatinize the starch.
    Note: Soaking time depends on the season and the time since the rice was harvested

    Steam the rice in a clay pot or rice cooker.

Once the Satoyama-no-Tsubu rice is cooked, it is known for its lovely appearance, with each grain plump and clearly defined. It has a firm texture with just the right amount of stickiness and a distinctively sweet taste.
