Fried shimimochi rice cakes
3–5 shimimochi rice cakes
Salad oil
Soy sauce/red pepper flakes (to taste)

Coat a pan with salad oil.

Add the shimimochi rice cakes immediately and heat the oil until it reaches 180–200ºC, then continue frying for 5–6 minutes.

Remove the fried shimimochi from the pan and place on a plate or tray lined with a paper towel to absorb the excess oil.

Flavor the rice cakes with soy sauce or red pepper flakes to taste.
Placing the shimimochi rice cakes in the oil while it is still at room temperature allows the heat to penetrate all the way through for a treat that’s crispy inside and out. Soy sauce and red pepper flakes aren’t the only flavoring options, either--you can use garlic, salt, sweetened soy sauce--whatever you like. Fried shimimochi are great for kids to snack on or take with them on outings. Of course they make a perfect snack for adults as well, and the spicy red pepper version goes great with a drink.
