If you want to experience a fuller taste of soba, then I recommend juwari-soba noodles, but if you’d like to enjoy how the noodles slide down your throat, then nihachi-soba (20% wheat flour and 80% buckwheat flour) is fine, too.” There are soba noodle shops that serve soba noodles in water in the Aizu Region, so please take the opportunity to visit and try authentic mizu soba.
