Mizu Soba (soba noodles served in water)

  • Soba noodles (uncooked) Single serving
  • Mineral water A suitable amount

    Fill a pot with water and bring to a boil.

    When the water boils, add the soba noodles and boil for approx. 40–50 sec.

    Once the noodles gently float to the top, scoop out with a strainer and place in a bowl filled with cold water. Lightly massage to remove the slippery texture

    Transfer the soba noodles into a bowl filled with chilled mineral water.

Nobuhiro Hoshi, a buckwheat farmer from the Minamiaizu community explains, “You may be a little surprised if making it for the first time, but mizu soba is the best way to enjoy soba noodles. If you want to experience a fuller taste of soba, then I recommend juwari-soba noodles, but if you’d like to enjoy how the noodles slide down your throat, then nihachi-soba (20% wheat flour and 80% buckwheat flour) is fine, too.” There are soba noodle shops that serve soba noodles in water in the Aizu Region, so please take the opportunity to visit and try authentic mizu soba.
