Nameko Mushrooms

Nameko mushrooms cultivation on substrate is said to have originated in Fukushima Prefecture, and as a result of the cultivation methods and varieties developed in the prefecture spreading throughout the country, the once high-class luxury item became available to all households. Currently, Nameko is produced and shipped year-round, primarily in the Central and Coastal regions of Fukushima. Nameko mushrooms are rich in water-soluble dietary fibre (pectin-like substances), making them a gentle ingredient for the body. This contributes to their unique “slimy” texture, which is part of their deliciousness. In addition to classic dishes like Nameko Soup and Grated Daikon with Nameko, they can be used in a variety of cuisines, including Tempura, Pizza, and Mapo Tofu, so be sure to give them a try. Fukushima Prefecture has a tradition of dishes that utilise local wild vegetables and mushrooms. Among them, mushrooms have been indispensable ingredients in various regional dishes, yet their original flavours are at risk of disappearance due to the diversification of food culture. In response, Fukushima has been developing cultivars with the concept of “recreating the original natural nameko”, resulting in the development of two varieties, Fukushima N5 and Fukushima N6, which are derived from natural nameko found in Nishiaizu, located at the foot of the majestic Mt. Iide.
