Soba

Soba is grown all over Fukushima, especially in the Aizu region. The 3,870 hectares under cultivation in 2022 made the prefecture the fifth-largest soba producer in Japan by area. It grows especially well in cool, high-altitude climates, where large daily temperature swings enhance its flavour, resulting in a high-quality unpolished buckwheat. On special days in Aizu, guests are treated to clear, white, 100% buckwheat soba that is firmer than usual as a delicacy, accompanied by hosts chanting performance that praises the soba and enlivens the occasion. There are also all kinds of ways to eat soba in Fukushima, such as Tachi Soba, Takato Soba, Hatto, and Dengaku, each rooted in the rich local culinary traditions in each area.

The Unknown Story behind Fukushima’s Original Aizu-no-Kaori Soba Brand

Aizu Branch of Fukushima Prefecture’s Agricultural Laboratory (now Aizu Research Centre of Agricultural Technology Centre) collected local varieties of soba from Aizu and other regions, repeatedly selecting individuals and strains to produce superior cultivars. This strain was originally called Aizu No. 3 and thoroughly tested at local cultivation sites before being released as Aizu-no-Kaori in 2007. By now, it has been planted on nearly a thousand hectares across Fukushima, much to the delight of soba connoisseur in the prefecture and beyond.

The Prefecture will take necessary measures for preventing leakage, loss or damage of the collected information or for otherwise managing the collected information in an appropriate manner. The Prefecture may subcontract operation of the Website to another operator, but will ensure that such an operator takes necessary measures for managing the collected information in an appropriate manner.
